This is controlled by an entry in the [General] section of the RealFeelPlugin.ini: LogEnabled=True This will log all console output to the file RealFeelLog.txt in the rFactor root folder. The file is reset to zero size on rFactor startup so if you want to keep the data take a copy (or rename the file) before restarting rFactor.
