Why I don't know. All of the development and car setup work has been done using a steering wheel, thus the gamepad lagged behind for a while. So in the clips you've seen there was a direct mapping from the gamepad input to the steering. This enables you to apply maximum steering in a split second. Thus the force builds up very quickly and you get the jerky movement. In later builds we are filtering the gamepad input before it is applied to the steering.
